Summer farming season is here—which means longer days, late nights, and meals that need to come together fast. This is when we really lean into the convenience of our brats and sausages.  

They’re perfect for the grill—but even more than that, they’re one of the easiest ways to get real, pasture-raised protein into all your favorite summer meals without adding extra work to your day.

The best part is they defrost fast in a sink of water or even 20 minutes on the counter, and they will be easy enough to cut for many of these recipes. The smoked sausages (Jalapeno Cheddar, Andouille, Kielbasa) are fully cooked, so they need to get warm enough to eat, or roll like I did when I was 4...eating hotdogs straight out of the freezer (really, I don't recommend it). And I can often be found defrosting ground sausage while it browns. 

Sausages & Brats – Summer’s Fastest Farm Meals

Here are 5 simple ways we use Brats and Sausages in our kitchen all year, but especially in the summer:


1. Sweet & Sour Pork (Hawaiian Brats(Quick Crowd Favorite)

This is one of our go-to recipes and a great way to change things up from the grill.

How we do it:

  • Slice Hawaiian brats into bite-sized pieces
  • Brown in a skillet
  • Add your sweet & sour sauce and simmer
  • Toss with peppers and pineapple

Why we love it: Big flavor, fast cook time, and a hit with kids and adults alike.

2. Sheet Pan Brats & Summer Veggies (One-Pan, No Fuss)

This is a staple on busy nights.

How we do it:

  • Add whole or sliced brats to a sheet pan
  • Toss with onions, carrots, potatoes, and cabbage
  • Drizzle with lard or avocado oil, salt, and pepper
  • Roast at 375°F for 30–40 minutes

Mix up the flavors with different combos:

  • Pork Brats + zucchini + tomatoes + garlic + basil
  • Apple or German Bratwurst+ cabbage + apples + onions (German-style)
  • Kielbasa sausage + sweet potatoes + peppers + chili flakes
  • Breakfast sausage + potatoes + onions (breakfast-for-dinner)

Farm tip: Use what you have—this is one of the most flexible meals we make.


3. Classic Grilled Brats (Fast & Easy)

You can’t beat simple when time is tight.

How we do it:

  • Grill over medium heat until browned and cooked through
  • Serve with buns or skip them
  • Add mustard, kraut, grilled onions, or fresh garden toppings

Farm tip: Grill extra for leftovers—they reheat great for lunches.


4. Sausage & Veggie Skillet (15-Minute Meal)

Perfect for those nights when you need dinner now.

How we do it:

  • Slice sausages and brown in a skillet
  • Add quick-cooking veggies like peppers, greens, or snap peas
  • Finish with garlic, salt, and a splash of vinegar or lemon

Why it works: One pan, quick cleanup, and endlessly customizable.


5. Sausage Breakfast Scramble (Anytime Meal)

Because breakfast-for-dinner just makes life easier.

How we do it:

  • Brown breakfast sausage or breakfast links
  • Add eggs, potatoes, and whatever veggies you have
  • Top with cheese if you like

Why we love it: Filling, simple, and keeps everyone fueled for the next day.
