100% grass-fed/finished. No hormones, no antibiotics. We raise Scottish Highlands and are starting to also do some Highland crosses. Some of the benefits of Highland cattle are: *Excellent Foragers & Browsers *Calving Ease *Docile Temperament *Adaptable to All Climates *Picturesque Heritage Breed *Tender, Lean, Flavorful Beef There are some tricks to cooking grass-fed beef to be tender. *Always make sure steaks and roasts are at room temperature before searing or grilling *Due to the leaner nature you may want to add a little bit of fat to the pan when browning ground beef. (Lard of course is our fat of choice)
