- (1/4 pound) Bacon
- Brussels Sprouts
1/4 pound bacon-cut into 1/2 inch pieces (I love using kitchen scissors to do this fast)
1 onion chopped
1 pound Brussels Sprouts-ends removed and cut in half
salt and pepper to taste.
Preheat the over to 400. Cover a rimmed baking sheet with parchment paper.Put the bacon and onions on the baking sheet and bake for 7-10 minutes, until the bacon starts to crisp a littleAdd the Brussels sprouts and toss with the bacon and more important the fat on the baking sheet and continue to bake another 20-25 minutes until the brussels are well roasted. I like to mix them a few times to get an even roast.You can do this with other veggies as well, beets, squash, cauliflower, broccoli, cabbage.
